Margarita spiced shucked oysters recipe

Oysters are the classic food of romance. This recipe combines that classic with a spicy Margarita ice garnish, creating a dish which looks incredibly impressive but is actually very simple to create. The hot, fresh flavours are ideal for a summer evening.

Ingredients:

500g caster sugar
500ml water
3 limes, juiced and zested
2 grapefruit, juiced
2 jalapeno chillies, finely chopped
100ml tequila
12 oysters

Directions:

  1. Dissolve the sugar into the water and add the lime juice/zest, grapefruit juice, chillies and tequila. Put in a container in the freezer.

  2. Fork up the mixture every half hour or so until you have a frozen mixture.

  3. Shuck the oysters. To do this, place the oyster on the chopping board with the curved side down. Grip it with your hand wrapped in a towel, with the hinge end facing outwards. Using a knife with a sturdy blade, find a gap in the hinge area and plunge the knife into the oyster. Twist the knife and lever the lid, then slide the knife around to dislocate the oyster entirely.

  4. Serve each oyster with a scoop of spiced ice. Eat immediately.
